How to peel a tomato
1. Using a sharp knife, lightly score the base of the tomatoes with a cross.
2. Place the tomatoes in a pan or bowl and cover with freshly boiled water. Leave for 3-4 minutes, or until the skins begin to wrinkle and split.
3. Plunge the tomatoes into a bowl of iced water to reduce their temperature.
4. Carefully peel away the skins with your fingers.
How to peel peppers
1. Cut the peppers in half and remove the stalk, seeds and white membrane.
2. Place the peppers under a hot grill, skin side up, turning as the skin blackens.
3. Seal in a plastic bag and leave to cool.
4. Remove the peppers from the bag. The skin shold now peel away easily.
How to make a granita
1. Place 300ml water in a pan with 150g granulated sugar, and the zest and juice from a lime. Heat gently until all the sugar has dissolved. Boil for 3 minutes, then remove from the heat and allow to cool. Liquidise 500g strawberries or raspberries with the syrup until smooth, sieve to remove the pips, and pour into a shallow plastic container.
2. Freeze for 2 hours, or until the mixture is frozen around the edges
3. With a fork, draw ice from the edges towards the centre. Return to the freezer, and then repeat this process about 3-4 times, every 30 minutes, or until all of the granita mixture is formed of ice crystals
4. Serve immediately

How to poach an egg
1. Pour boiling water into a shallow pan or frying pan, to a depth of about 3cm. Bring back to the boil then reduce to a simmer.
2. Crack each egg into a cup, then gently tip into the water. Cook no more than 2 or 3 eggs at a time.
3. Keep the water simmering for about a minute, until each egg white is opaque.
4. Carefully remove the poached egg with a slotted spoon and serve immediately.
